A Low Profile Easter

Happy Easter!  Adam finally flies home tonight from Honduras, so I’ll be glad to have some company again (although Macy is a great side kick, I must say).

Usually I make something a little more exciting for breakfast on Sundays, but since I’m cooking for one this weekend, I settled for my weekday go-to: Protein Oats!  I love this mix and eat it several times a week when time is limited in the morning. They’re super quick and easy, fill me up for hours, and give me loads of energy.

Ingredients
  • 1 serving organic whole grain oats
  • whole raw almonds (small handful)
  • 1 scoop protein powder
  • 1 tsp organic ground flaxseed
  • 1 dash cinnamon
  • 1 tbsp nut butter (I love the Adams natural brand)
  • 1/2 cup almond milk
  • sliced fresh fruit of choice
  1. Mix almonds, protein powder, flaxseed, cinnamon, and almond milk into dry oats.
  2. Add your blob of nut butter.
  3. Microwave for 1 minute 15 seconds.  (Note: The above steps can be done on the stove top as well, which I really like when I have more time)
  4. Remove and stir thoroughly, mixing peanut butter throughout.
  5. Add fruit and enjoy.

I played barrista today and made a cafe misto on the espresso machine to accompany my easy, albeit delicious breakfast.

I finally made reservations this morning at the Marriott Chateau Champlain in Montreal for my friend Eryn’s upcoming bachelorette festivities in June (so excited), and then went on a little dog park adventure.

On the docket for this afternoon/evening: the gym, marking lab reports, and some phone dates with a few of my long distance besties.  

In the meantime, I’ll be spoiling myself with my favourite Easter treat: Mini Eggs!  It wouldn’t be a holiday without an indulgence in these bad boys.  And yes…I only bought a one serving package.  Otherwise, things may get out of control!
