After the crazy weather we experienced here in Brisbane over the weekend, Monday has been quite the 180º change!
Here’s a glimpse of main living area thermometer this afternoon:
This is the first day since we moved here that I’ve had to turn the AC on!
I had a busy morning running errands that included the guzzling of this delicacy:
I had to get blood work done to test for gestational diabetes (normal practice here for everyone between 26-28 weeks of pregnancy). Suuuuugar high (and kind of gross)! I don’t eat sugar in this kind of excess, so I was feeling fairly loopy during my 1 hour waiting period. It definitely made me more efficient as I buzzed wildly around the grocery store at 9:30am. Who needs coffee when you can have a carbonated glucose drink?! 😉
I then had a mid-day movie date with some of the expat ladies I’ve met here. Today’s movie: The Bachelorette.
Unfortunately, none of us actually read any reviews before we made this plan. I was totally thinking “Bridesmaids” or “The Hangover” caliber.
Let me tell you…if I had more than 2 thumbs, I would give as many as I could DOWN for this movie. I’m surprised that someone like Kirsten Dunst would sign up for this. I’m sure there are people out there who enjoyed it…maybe. I think that I have a decent sense of humour, but didn’t find the jokes or plot of this movie amusing at all. It’s the first movie I’ve seen in theatres since I can remember that I’ve wanted to get up and leave.
At least my movie snack was a good diversion. Although I love delicious, buttery popcorn, I can’t be indulging in it on a Monday. That’s definitely an occasional weekend treat for me. Instead, I packed some dried apricots, plain almonds, and a few squares of dark chocolate!
I ran a few more errands this afternoon and enjoyed a few more snacks once I got home, including this no brainer that I can’t wait to add smoked salmon to when I’m not pregnant anymore!

Since I was running around all day, I didn’t have a chance to get to the gym. Luckily, Adam’s out at a work dinner tonight, so I am off now to squeeze in a cardio session on the elliptical before picking him up!
But before I go…
I had an email request for my healthy french toast recipe that I posed a picture of yesterday, so here it is! It’s super easy, and a nice brunch idea for the weekend. I only used kiwi because our berry selection was limited, but Adam and I both agreed that the fruit’s acidity was a really nice compliment to the moderate sweetness of the cinnamon & vanilla.
*serves 2-3 people
– Eggs: 5 medium sized
– Cinnamon: 1 tsp
– Vanilla Extract: 1 tsp
– Thick Whole grain or Sourdough Bread
– Fruit (Berries or Kiwi)
– Topping of choice: I used a bit of maple syrup
1. Whisk eggs, cinnamon, and vanilla in a shallow bowl or tray.
2. Heat a large (and greased) griddle/pan on low-medium heat. Soak 2-3 pieces of bread in the mixture (just for a few seconds) and grill until golden brown on one side. Flip!
3. Repeat with however many remaining pieces of bread you have.
4. Add fruit & syrup, and enjoy!
