Nothing seemed more satisfying than a chocolate milk latté to lift my spirits this morning.

I immediately ran back downstairs with it, escaping into our air conditioned guest room (aka: where I had been stationed since sometime around midnight). As I am sure everyone in Brisbane would agree, it was incredibly hot/humid last night…and our bedroom doesn’t have AC. Adam continues to remind me that I should not complain- many people in this world live in extreme heat and aren’t blessed with a comfortable mattress and Italian sheets. However, when you’re feeling the size of a marine mammal and trying to sleep through steam room-like conditions, complaining is seemingly inevitable.
I was getting pretty hungry, so I emerged from the room once again. My glasses literally fogged up when I went upstairs this time due to the humidity! We’ve been trying to conserve the use of air con, especially knowing we’ll need to use it a lot more once the Bubs is born. I opted for the quickest possible breakfast option so that I didn’t have to stay there for any longer than necessary.

It was a puttering around kind of day…cleaning, organizing, talking to family, catching up on emails. To be honest, I kind of wish that I was working right now and can totally understand why some women choose to work right up until they give birth. It would really help to pass the time and keep my mind preoccupied!
Anyway, I decided to drag myself to the gym for an elliptical workout. My feet (and hands) have been super swollen lately, and it was actually uncomfortable putting my runners on! What was a planned 45 minutes on the elliptical turned into 35, as my feet were feeling enormous and fell fast asleep somewhere around the 20 minute mark. Oh well…better than nothing, I suppose!

Does anyone agree that there haven’t been many solid workout tunes in awhile? I find there are times throughout the year when I could easily make an hour+ of amazing, new, cardio-worthy songs. Lately though, it’s been a struggle. I made this playlist a couple weeks ago which I’ve been enjoying, but definitely looking forward to some new 2013 pump up songs to help power through my cardio sessions. I think I’ll have to dig into my oldies but goodies list soon!
The wind picked up this afternoon, so I decide that with a breeze I could power through a baking session: some healthified banana chocolate chip muffins! I looked at 3 or 4 different recipes online, but none seemed to included everything I wanted in a healthy-as-possible muffin, so I created my own version. Voilà!
Makes 12 large muffins
1. Line a muffin tray with 12 liners and preheat oven to 325ºF (about 160ºC).
2. With an electric mixer, combine butter and sugar in a large mixing bowl. When combined thoroughly, add: eggs, vanilla, bananas, and apple sauce and beat at medium speed.
3. In a second bowl, combine: flour, cocoa powder, protein powder, fibre mix, baking soda, salt, and cinnamon. Mix together with whisk or fork.
4. Add dry mixture into the larger, wet mixture. Blend together at a low speed until completely combined.
5. Mix in chocolate chips with a fork or spoon.
6. Fill muffin liners with batter.
7. Bake for 25 minutes or until a tooth pick comes out clean from the centre!
