Make You Banana Pancakes…

Waking up too early,
Maybe we can sleep in.
Make you banana pancakes,
Pretend like it’s the weekend now…
And we could pretend it all the time.

Sorry. Couldn’t help myself there! Every time I make banana pancakes, I get a little JJ stuck in my head!

If we don’t have plans on a weekend morning, I’ll typically make pancakes. Although you can never go wrong with a classic buttermilk pancake recipe, you know me. I’ll usually try to spruce the ingredient list up a tad so that things are a bit healthier. Sometimes it’s my protein cakes, and other times it’s a new recipe like these almond meal coconut pancakes with blueberries I had a couple of weeks ago. Sometimes I’ll add fruit, and on special occasions, chocolate chips have been known to make their way into the mixing bowl.

Just like Jack Johnson’s song, this weekend was a little rainy and overcast, so we didn’t venture out too far besides a BBQ with friends on Sunday afternoon (which turned out to be warm and sunny, thankfully). Instead we snuggled our soon-to-be-toddler (ahh!) and chowed down on some banana protein pancakes, which was a nice treat after my Saturday morning Body Attack class.

I know there are a million different pancake recipes out there, but here’s how I make mine. For my “of choice” options, I am currently using Amazonia Raw’s Protein Isolate Vanilla, which is a pea and brown rice protein combo {it’s so, so good}. I also use organic skim cow’s milk, Himalayan rock salt, and organic free range eggs. Based upon your personal preferences, food intolerances, and nutritional research, change it up as you please. Buckwheat flour would also work in place of the whole wheat. I probably would have used it if I had some in my cupboard. Oh oh oh…and also: I love to throw a teaspoon of coconut oil on the skillet instead of butter. It gives the pancakes a perfect brown crisp, plus I love the coconut infusion.

Even the little guy got his own pancakes (I add the protein after portioning out some for him), topped with some Jalna vanilla yogurt.

Of course, a dash of the good stuff for the big kids.
And now, even though it is currently 11:15pm I want to go eat pancakes again. A simple and delicious treat, they always remind me of rainy weekend mornings with the people I love most.

    Also please teach me how you make your pancakes look so perfect. Like actually they are glorious. Come make them for me for dinner! I’ll return in endless hours of babysitting (I win both ways here, for the record!)

    You know I love my pancakes and having them on the weekend is such a great tradition. Would it pain you that I am trying to create a Vegemite pancake?

      Yeaaah, although I like his earlier stuff, I don’t think I could work out to his music. I think he actually has a children’s lullaby album haha.

      After trying vegemite the other day…yes. Yes it would pain me.
